Following on from our first video on maturing, storing and pouring, we are now looking at how St. Stefanus matures in the bottle.
But why does this maturation occur, and why does it matter?

As Jef explains in this video, refermentation, or bottle fermentation, allows the beer to slowly mature in the bottle, changing the taste of the beer over time, meaning you can choose the taste of your St. Stefanus.
